Bastille and music and Apothic Wine and chicken and waffles
If you were in a famous band, which of the following would you be most excited about: 1. A decked-out tour bus, 2. Legions of adoring fans, or 3. Partnership with a winery who wants to stock your shows with vino?
My friend Faith and I slipped into the pre-show VIP lounge, and I realized how unusual this seemed to me. I would have initially expected something like a slick vodka—or perhaps a imported beer—to sponsor a multi-platinum indie pop band. Yet, there we were, under the glow of vibrant red lights, sampling Apothic’s blends while we waited for Bastille to take the stage.
Oh! There was this chicken + waffle appetizer? And the chicken was baked INTO the waffle. I mean…again, an unexpected thing to pair with a glass red wine, but HOLY HELL I should serve this exact combination at every party I ever throw from now on. And maybe also at dinner every Tuesday.

In fact, I remember years ago, when I saw Colin Meloy play a solo set in Santa Cruz. He was there with just a couple of guitars, a microphone, and a bottle of red wine. I thought about the prominent role wine had played in my creative endeavors. I thought about the way this magical beverage had affected so many other artists. I also thought, to be totally honest: damn, what a sweet gig.
